A restaurant based in Nelspruit is looking for a Kitchen Manager / Head Chef

Duties:

Coordinate the whole kitchen
Assist in the preparation of the specialty dishes, train and coach all Back of House staff
Recipe conception on specialty dishes
Liaise with Head Office on a constant basis in terms of direction, training and follow up
Compliance with Head Office best practice standards
Ensure that you are serving only the best quality to guests at all times (freshness, taste and look)
Look after the food cost and maintain spot stock checks on high value items (such as fish, meat, chicken and cheese)
To work closely with the General Manager in achieving food cost and margin goals
To manage, train and maintain all kitchen staff in preparation of the food relevant to their position and station
Coordination with suppliers and maintaining good relationships
Follow all uniform guidelines
Remain calm in busy, stressful situations
Demonstrate a high level of organization, attention to detail and a sense of urgency
To constantly improve knowledge in regards to the current food trends
To attend and actively participate in all food training sessions on and off restaurant site
Ensure that products are of the franchise requirement quality specifications
Practice all safety and hygiene standards by HASAP
Check And follow up on the prep, daily cleaning and weekly cleaning check lists
Recycle products (where possible – glass, paper and tin)
Capture and count weekly and monthly stock count
Compile weekly kitchen staff roster

Kitchen Manager
Deal with daily and weekly orders for the Back of House stock receiving
Maintain a well-groomed appearance
Candidate Requirements
Requirements:

English speaking
Chef qualification and a minimum of 3 years in the industry
Admin focused in terms of back end stock control food costing monitoring
Ability to lead all staff in a positive manner with good communication and motivation while never forgetting the customer is number one
Minimum 3 years hospitality experience
Valid drivers license with own vehicle
Scheduling of shifts for team members
Managing cash flows and cash up’s
Reliable and can work well under pressure
Willing to work shifts
Strong ability to perform food safety and health checks
Experience in ordering stock and stock take
Customer service skills are essential
Ability to stay on trend in a fast-paced industry
Team leader
Work as a champion in executing marketing campaigns at store level
A passion for food and an understanding of the restaurant business
The ability to challenge one’s self daily to accomplish new goals and make the brand better than it was the day before
Appreciate the unique differences in the brand and why it is set apart from the rest
